Preparation Instructions

The Pardon

Carve out a new holiday tradition.

The Pardon is a roast for the rest of us, a glorious feat of flavor and activism. Roast it, carve it, and serve it at the family table. Awkward silences be gone!


Step 1

Preheat oven to 350°. Lightly oil The Pardon and place in the center of a 9 x 13 baking dish.


Step 2

Add 1 cup white wine or vegetable stock, cover with foil and bake for 30 minutes. Uncover and bake 20 minutes more and until internal temperature is 165 degrees F (minimum).


Step 3

When done, let the Pardon rest for 5 minutes. Slice and serve!

1) Do I need to thaw the Pardon prior to cooking?

A: Just like your mind and body, The Pardon needs to prepare for a feast this epic. Make sure to thaw it in the refrigerator 24 hours prior to cooking.

2) Is The Pardon oil-free like your other products?

A: We always want to deliver the best flavor and texture. We add extra virgin olive oil to The Pardon for increased richness and to keep it nice and juicy after its trip to the oven.

3) How many people will the Pardon feed?

A: Each Pardon will feed about 8 people.

4) How long will the Pardon last in the freezer?

A: The Pardon lasts a whole year in the freezer! Check your box’s expiration date for specific details.

5) How long will cooked Pardon leftovers last in the refrigerator?

A: 5-7 days. (Leftovers make damn good sandwiches, and turkey pot pie, and turkey shepherd’s pie, and mmmm.)

6) Does the Pardon have a center filling?

A: Nope! The Pardon is unstuffed. Leave the side dishes on the side! This is a roast that deserves to be at the center of the plate.
