Vegan buffalo chicken sub made with No Evil Foods Comrade Cluck 'No Chicken'

Buffalo ‘Chicken’ Sub

We were a little selfish with this one. Instead of thinking about what y’all would want to look at in a pretty food photo, we thought, “what do WE want to eat right now?” Here’s the answer! Now any day can be a dripping Buffalo ‘Chicken’ sub kinda day.

Ingredients

1 package Comrade Cluck ‘No Chicken’
1/2 yellow bell pepper, sliced
1/2 red bell pepper, sliced
1/2 medium yellow onion, sliced
2 tablespoons oil
1/3 cup Buffalo sauce
2 sub/hoagie rolls
Vegan ranch dressing (We used Follow Your Heart.)
Kosher salt and black pepper, to taste
Chives, for garnish

The How-To

Preheat oven to 375 degrees F. Thinly slice peppers and onions.
In a large skillet heat 2 tablespoons oil over medium heat. Add Comrade Cluck, peppers, and onions to skillet. Sprinkle with salt and pepper and cook until peppers and onions are soft, another 3-5 minutes.
Stir in Buffalo sauce and remove from heat.
Place subs, sliced lengthwise in a baking dish. Spoon in the buffalo chicken filling
Bake the subs for 10-12 minutes until toasted and bubbling hot.
Garnish subs with a drizzle of vegan ranch dressing and fresh chives. Serve while warm.
