Saucy and sweet, this bowl is the perfect pick me up!
Ingredients
1 package Pit Boss Pulled ‘Pork’ BBQ
1/4 cup extra BBQ sauce
2 tbsp pineapple juice
juice from 1 lime
3/4 cups fresh pineapple chunks
1-2 jalapeños, chopped and seeded
2 tbsp fresh cilantro, chopped
kosher salt and pepper
2 cups cooked quinoa or rice
1/2 cup cherry tomatoes, halved
1/4 cup fresh basil, and or cilantro leaves, roughly chopped
1 1/2 cups shredded romaine lettuce
1 avocado, sliced
The How-To
Heat 1 tablespoon olive oil in a large heavy-bottomed pot over medium-high heat. When the oil shimmers, add the Pit Boss and season with salt and pepper. Sear Pit Boss about 3-4 minutes.
Reduce the heat to low and add 1/4 cup BBQ sauce, pineapple juice, juice of 1 lime, 1/4 cup pineapple chunks, and half the jalapeño. Cover and simmer on low for 10 minutes. If the sauce gets too thick, add water to thin it out.
After 10 minutes, stir in the cilantro and extra BBQ sauce, if desired.
Meanwhile, make the salsa. In a bowl toss together the remaining 1/2 cup of pineapple chunks, remaining jalapeño, tomatoes, basil and/or cilantro, lime juice, and a pinch of salt.
Divide the quinoa among bowls and top with the lettuce, pineapple salsa, the Pineapple Pit Boss, and avocado. Drizzle with the remaining BBQ sauce left in the bowl.
